Thai tofu tacos

Truth is I don't do a lot of cooking. My husband is a great cook and I usually leave that up to him. But because we are vegetarians (mostly because of me), I like to add yummy staples of fun and easy recipes to my go to options.
So tofu tacos! I know it doesn't sound good, but these are so good!
I dont measure ingredients so just eyeball.
First, dry tofu. squeeze out excess moisture and wrap it in a towel and place something heavy on it. Let it sit for 15 minutes. Once dry, cut it up into small cubes.
Then, make the sauce with:
peanut butter about one small spoon
dash soy sauce
dash maple syrup
dash rice vinegar
dash siracha
two cloves garlic
little bit of ginger either fresh or paste
mix it all up well. set aside for tofu
For the cole slaw topping:
Use one small bag of cabbage slaw. Mix with vegan mayo, lemon juice, salt and pepper. Put in fridge for later.
Time to cook the tofu! Heat up skillet with veggie or olive oil. Place the tofu cubes in and cook until tofu in browned. Then add peanut sauce. Stir for a couple minutes.
Add a bunch of fresh bok choy and cook only until bright green but still crisp, about 1-2 minutes.
Put tofu in a flour tortilla, top with slaw, and a fresh sprinkle of cilantro and tada! Easy, fast, and so good!
